Well, she's used to being alone and knows he doesn't have anyone else.
Jade doesn't have much experience with women outside of a formal setting, but it's more the issue of he's normally too busy keeping an eye on Orsted to have an interest. He can't help but observe Ariel out of curiosity and wanting to understand.
He's also seen and heard Orsted in action. Finally his chance when someone sparks an interest.
