At this point, it's moreso that the Royal (regardless of gender) is seen as the future head, and an appropriate partner is selected. However, fighting and strength is typically associated with the male side, so finding a strong partner for Chiffon (and the queen) were the focus. If the Royal were male, then a female partner of grace and wit would likely be the criteria instead.
Chiffon's father was actually a former noble who won his tournament. 'Knight' is just a title for the princess's protector. That is why there is a bit of surprise that a commoner is doing so well.
